Ingredients
6 oz Prosecco, chilled
2 oz soda water or sparkling water
2 oz elderflower syrup (Like St-Germain or a non-alcoholic elderflower cordial)
A few sprigs of fresh mint
2–4 lime slices

Chill your glasses – Pop your wine glasses in the fridge or freezer for a few minutes while you prepare everything else.

Add mint and lime – Place 3–4 fresh mint leaves and 1–2 lime slices in each glass. Gently muddle with a spoon to release the mint’s aroma, but don’t crush it too much.

Add ice – Fill the glass about halfway with ice cubes to keep the cocktail cold and crisp.

Pour in elderflower syrup – Add 1 oz (30 ml) of elderflower syrup per glass. If using elderflower liqueur like St-Germain, it will give a slightly boozier, more floral result.
