Summer calls for peachy bellinis, winter demands cranberry sparkle, and fall? Fall belongs to the apple cider mimosa. This gorgeous twist captures everything we adore about autumn—crisp apple flavor, warm spice notes, and that satisfying sweetness—all wrapped up in bubbly elegance.

- Champagne/sparkling wine flutes (stemmed or stemless)
- Knife to chop your apple garnish
- A bamboo skewer may help if you wish to skewer your apples

Apple Cider Mimosa Recipe
A sparkling fall cocktail combining crisp apple cider with champagne for an effortlessly elegant brunch drink that tastes like autumn in a glass.

Ingredients
- 3/4 Prosecco (or your favorite sparkling wine)
- 1/4 apple cider
- Fresh Apple as a garnish
- (Optional) Fresh thyme and star anise as a garnish
Instructions
- Start by part-filling each glass (or your serving pitcher) with the cider
- Make sure you pour slowly so it doesn’t develop a frothy head
- Tilt each glass and gently top up with the prosecco
- Add an apple slice as a garnish.
- If you have them, fresh thyme and star anise also add an extra touch
Notes
As this is an easy cocktail to scale up, I’ve given proportions rather than oz/mls.
As a guide, the average mimosa glass/champagne flute can hold 6 oz; you’d use approxiamtely 4.5 oz of sparkling wine and 1.5 oz of apple cider.
For a pitcher jug to serve 12, for example, you’ll need 54 oz of sparkling wine (approximately two bottles), and 12 oz of apple cider.

Optional: Garnish the glass rim
An apple cider mimosa is often sweet enough not to require a sugared rim; however, if you want to add an extra touch to your presentation, it is easily done!
To sugar the rim of the glass:
- Take a saucer and sprinkle a generous amount of sugar onto it. With cider, we like brown sugar and cinnamon sugar the best for taste and colour.
- Gently wet the rim of your glass and place it upside down to allow the sugar to stick. You can use your apple cider for this.
- Pour your cocktail as usual.
