3 oz Sprite

1 oz Malibu Rum

1/2 oz Cream of Coconut

1/2 oz grenadine

1 package blue Pop Rocks

Light corn syrup for rim

Maraschino cherries for garnish (optional)

Instructions

Put the corn syrup on one saucer and pour the blue Pop Rocks onto the other.
Dip the rim of the serving glass into the corn syrup and then into the Pop Rocks, making sure to coat well. Place in the refrigerator to set for 5 minutes.
Add the Malibu and Cream of Coconut to a cocktail shaker filled with ice and vigorously shake well to combine (about 15-20 seconds).
Retrieve the serving glass from the refrigerator and pour the Malibu mixture into the glass.
Drip the grenadine into the center. Just let gravity take over and slowly drip in enough grenadine to cover the bottom 1/4-1/2” of the glass or until desired layer of red is achieved.
Using a bar spoon or teaspoon, SLOWLY and gently pour the Sprite onto the back of the spoon, aiming at the inside edge of the glass.
Skewer the maraschino cherries and place on top of the glass.
Serve and enjoy!

Notes

Serving Suggestions/Variations:

Other lemon-lime soda, coconut rum can be used in place of Sprite and Malibu Rum.
If you can’t find Pop Rocks, blue sanding sugar works well too.
If making several of these or a big batch, it’s easier and cheaper to use blue sanding sugar.
To make as a mocktail, omit the rum and replace with more Sprite.
These are best made just before serving. If they sit too long, the coconut cream will start to separate and float to the top.
