Watermelon Mint Cooler Mocktail

A light, fresh, completely alcohol-free cooler built on real watermelon juice and muddled mint.

  • Total Time: 8 minutes

Ingredients

1 1/2 cups cubed seedless watermelon

6-8 fresh mint leaves, plus more for garnish

1/2 oz fresh lime juice

1/2 oz simple syrup, to taste

2 oz club soda or sparkling water

Instructions

  1. Blend the watermelon until smooth, then strain through a fine-mesh sieve into a pitcher to remove the pulp.
  2. In the bottom of a glass, gently muddle the mint leaves with the lime juice to release the oils.
  3. Fill the glass with ice, then pour in the watermelon juice and simple syrup. Stir.
  4. Top with club soda, and garnish with a watermelon wedge and a fresh mint sprig.

Notes

  • Watermelon’s natural sweetness varies a lot depending on ripeness — taste before adding the full amount of simple syrup.

 

  • Leftover purée freezes beautifully into popsicles.
