Ingredients

1 (15 oz.) can of corn, drained and rinsed
1/2 cup tofu
1 tablespoon lime juice (juice from 1 lime)
2 garlic cloves
1/4 teaspoon salt
1/4 cup milk
3/4 cup chopped cherry tomatoes
1/4 cup fresh chopped basil
Tortilla chips,crackers, or veggies for dipping
Instructions
- In a food processor combine 2/3 cup of the corn, the tofu, lime juice, garlic, salt, and milk.
- Blend until well combined.
- Add the mixture to a mixing bowl along with the remaining corn, the chopped tomatoes, and basil. Gently stir to combine.
- Refrigerate until ready to serve.
- Serve with tortilla chips, crackers, or vegetables for dipping.
Notes
- Can use fresh corn – about 2 cups. Cook in a skillet first with a little butter or olive oil, let cool, then continue with the recipe.
- Storage: For best results, store in an airtight container in the refrigerator. Consume within 3 days for best taste and texture.
