This Tofu Corn Dip is a creamy, dairy-free twist on the classic, blending sweet corn with seasoned tofu for a flavorful, plant-based appetizer. It’s easy to make and perfect for scooping with chips or veggies at parties, picnics, or casual get-togethers.

Ingredients

1 (15 oz.) can of corn, drained and rinsed

1/2 cup tofu

1 tablespoon lime juice (juice from 1 lime)

2 garlic cloves

1/4 teaspoon salt

1/4 cup milk

3/4 cup chopped cherry tomatoes

1/4 cup fresh chopped basil

Tortilla chips,crackers, or veggies for dipping

Instructions

  1. In a food processor combine 2/3 cup of the corn, the tofu, lime juice, garlic, salt, and milk.
  2. Blend until well combined.
  3. Add the mixture to a mixing bowl along with the remaining corn, the chopped tomatoes, and basil. Gently stir to combine.
  4. Refrigerate until ready to serve.
  5. Serve with tortilla chips, crackers, or vegetables for dipping.

Notes

  • Can use fresh corn – about 2 cups. Cook in a skillet first with a little butter or olive oil, let cool, then continue with the recipe. 
  • Storage: For best results, store in an airtight container in the refrigerator. Consume within 3 days for best taste and texture.
