For the cupcakes:

1 1/2 cup sugar

1 1/2 cup flour

3/4 cup Hershey’s dark cocoa powder

2 eggs

1 teaspoon baking powder

1/2 teaspoon salt

3/4 cup milk

3/4 cup water

1/4 cup oil

1 teaspoon vanilla

For the topping:

1 cup semi-sweet chocolate chips

1/2 cup heavy cream

Instructions

1. Preheat the oven to 350 degrees. Line standard muffin tins with cupcake liners, set aside.
2. In the bowl of a stand mixer, combine the sugar, flour, cocoa powder, baking powder and salt.
3. Add in the eggs, milk, water, oil and vanilla. Mix well – scraping down the sides and mixing again.
4. Divide the batter between the cupcake liners and fill until about 1/2 -⅔ full.
5. Bake in the preheated oven for 14-15 minutes or until the center is set and a toothpick comes out clean.
6. Allow to cool before decorating.
7. For the topping – in a medium bowl, combine the heavy cream and chocolate chips. Heat in the microwave for one minute. Stir well until the mixture is smooth. Allow to cool slightly before decorating.
8. To decorate – scoop a spoonful of chocolate ganache over each cupcake and spread evenly over the top.
9. Sprinkle the candy coated chocolate chips over the ganache.

For the cake:

2 (15.25 ounce) boxes white cake mix

8 egg whites

2 1/2 cups milk

1 cup butter

1 tablespoon lemon juice

Yellow, blue, pink food coloring

For the frosting:

2 sticks unsalted butter, softened to room temperature

2 pounds powdered sugar

6 tablespoons milk

2 tablespoons lemon juice

1. Preheat your oven to 350 degrees.
2. Melt your 1 cup of butter.
3. In a large mixing bowl combine the cake mix, melted butter, 8 egg whites, milk, and lemon juice.
4. Spray three 8 inch cake pans with non-stick spray.
5. Divide the cake batter between the 3 bowls
6. Add pink food coloring to one bowl, yellow to another and blue to another.
7. Pour each color batter into a prepared pan.
8. Bake the cakes for 22-25 minutes or until a toothpick inserted in the middle comes out clean.
9. Let the cakes cool slightly and then remove from the pans onto a wire rack to cool completely.
10. Once the cakes are completely cooled you can make your frosting.
11. In a large bowl combine your softened butter, powdered sugar, 6 tablespoons milk, yellow food coloring and 2 tablespoons of lemon juice.
12. Place one cake on your cake plate and top with a good amount of the frosting and spread out.
13. Top with the other cake.
14. Place frosting on top of that one and add the final cake layer.
15. Frost the cake completely.
16. Using a piping bag or ziploc bag with the corner snipped off to pipe around the edge.
17. Decorate with Easter candies and or Easter sprinkles.
18. Slice and serve!

• Keep leftovers in an airtight container in refrigerator for up to 4 days.

10. Allow the candy melts to set completely before attempting to carefully remove from the parchment.
11. For the frosting – in the bowl of a stand mixer, combine about half of the powdered sugar with the softened butter, vanilla and salt.
12. Mix on low until combined, scraping the sides often.
13. Add in the remaining powdered sugar and the milk.
14. Mix on low until combined. Scrape down the sides and then bump up the speed to medium and continue to whip until the frosting is smooth and fluffy.
15. Once cupcakes are cool, spread the sprinkles on a plate or shallow bowl.
16. Using an offset spatula or similar, spread a thin layer of frosting over the top of each cupcake. Immediately roll the outside edges in the sprinkles. Set aside and continue with the rest of the cupcakes.
17. Transfer the remaining frosting to a piping bag fitted with a large round tip.
18. Pipe a large round mound of frosting in the center of each cupcake.
19. Place a bunny tail on the top of the frosting mound and two feet pointing down toward the front side of the frosting mound.

Ingredients

For the cupcake:

1 1/2 cups all-purpose flour

1/3 cup cocoa powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup warm coffee or hot water

1 tablespoon white vinegar

1/3 cup avocado oil or other neutral tasting oil

1 large egg

2 teaspoons vanilla extract

For the raspberry buttercream:

1 cup (2 sticks) salted butter, softened

3/4 cup freeze dried raspberries

3 tablespoons half and half or whole mile

2 teaspoons vanilla extract

3 cups powdered sugar

Fresh Raspberries for decoration (optional)

Instructions

1. Preheat your oven to 350°F (175°C) and position the rack in the center. Line a 12-cup muffin tin with cupcake liners.
2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt, making sure to break up most of the cocoa lumps.
3. In a separate bowl, whisk together the coffee, vinegar, oil, egg, and vanilla extract until well combined.
4. Gradually add the wet ingredients to the dry ingredients, whisking gently until just blended. The batter will be slightly loose and may have small lumps—this is normal.
5. Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full. Avoid overfilling.
6. Bake for 20-22 minutes or until a toothpick inserted in the middle comes out clean.
7. Allow the cupcakes to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely. While cupcakes are cooling, prepare the frosting.
8. Using a food processor or blender, process raspberries into a fine powder.
9. Sift out seeds, using a fine mesh strainer (it’s okay if a few seeds get by)
10. In a large bowl, using a hand or stand mixer on medium/high speed, beat butter until creamy.
11. Add raspberry powder, vanilla and half and half to butter and continue to beat on medium speed until fully combined.
12. Slowly add the powdered sugar, continue beating on low speed until all of the sugar is combined, then turn up the mixer to high speed and continue beating another 1-2 minutes until smooth and fully combined.
13. Spread or pipe frosting on cooled cupcakes. Top with fresh raspberries, if desired.

Notes

• The coffee adds some depth of flavor to the cupcakes but hot water also works perfectly.
• For the buttercream, unsalted butter will also work just add a pinch of salt with powdered sugar.
• The raspberry buttercream can be made up to a week in advance and stored in the fridge. Just warm to room temperature and mix with a hand mixer before using.
• The buttercream makes enough to generously pipe 12 cupcakes.
