Raspberry Lemonade Popsicles

Ingredients

1/2 cup fresh lemon juice

1/2 cup granulated sugar

1 3/4 cups water

2 cups raspberries, fresh or frozen

Instructions

  1. Combine water, lemon juice, and sugar. Stir until sugar is dissolved.
  2. Add raspberries to blender with 1 cup of lemonade mixture.
  3. Blend until smooth.
  4. Divide the pure lemonade mixture between the molds evenly. Top with the raspberry puree mixture, leaving a 1/4”/6mm gap at the top of each mold to allow expansion during freezing.
  5. Use a knife or chopstick to swirl the two mixtures together.*
  6. If you have a lid for your molds, place it on before sticking the sticks in until only 1 1/2”/37mm is protruding. If your molds don’t have a lid, cover with a couple layers of plastic wrap or aluminum foil to hold the sticks in place.
  7. Freeze for at least 6 hours.
  8. Remove from the molds by gently putting pressure on the base while lifting by the stick. If using a metal or plastic mold, dip the tips in hot water for 10 seconds before trying to remove.
  9. Store frozen in bags or wrapped in plastic for up to 1 month.

Notes

  • *For a more homogenous popsicle with full raspberry and lemon all the way through, blend the raspberries with all of the lemonade mixture. Mixture can also be strained to minimize any seeds.
  • Texture/taste Notes: Sweet and tart lemonade popsicles with raspberries are perfect for hot days. Make them layered, swirled, or blended all together for an easy and colorful treat. Just four ingredients including water, and can be made with fresh or frozen raspberries. An excellent way to get more hydration and vitamin C on hot days.
  • Lemon juice: Freshly squeezed lemon juice is the best choice for this recipe because of the minimal ingredients. Preserved lemon juice will not be as bright and acidic and may have a lesser lemon flavor.
  • Sugar options: The granulated sugar can be replaced with ½ cup maple syrup but this will impart a particular flavor to the popsicles. If using maple syrup, reduce the water to 1 ½ cups.
  • For extra flavors, use infused simple syrups in place of the sugar. Due to simple syrups being more dilute than sugar, use about 2/3 cup and reduce the water to 1 1/3 cups. Flavor suggestions: Ginger, vanilla, spearmint, almond, black tea.
  • Artificial sweeteners will change the texture of the popsicles, making them icier and harder.
