Bright, tangy, and bursting with tropical flavor, this Pineapple Margarita Mocktail adds a splash of sunshine to any celebration. Made with pineapple, lime, and a touch of orange, it’s refreshingly sweet, lightly fizzy, and even more fun with colorful berry ice cubes and tropical garnishes!

Ingredients

1 cup of fresh pineapple chunks (or canned pineapple, drained)

1/2 cup of fresh lime juice (about 2-3 limes)

1 tablespoon of agave syrup or honey (adjust to taste)

1/2 cup of orange juice

1/2 cup of sparkling water or lemon fanta

Lime wedges and pineapple slices for garnish

Ice cubes

For the red ice cubes made from berries (optional):

1 cup mixed fresh or frozen berries (strawberries, raspberries, cherries, etc.)

Water or fruit juice (e.g., apple juice)

Instructions

  1. Make the Pineapple Puree – In a blender, combine the pineapple chunks and blend until smooth. If desired, strain through a fine mesh sieve for a smoother consistency. 
  2. Mix the Drink – Combine the pineapple puree, fresh lime juice, orange juice, and agave syrup or honey. Stir well to combine. 
  3. Add Sparkling Water or lemon Fanta – Gently stir in the sparkling water or club soda for some fizz. 
  4. Serve – Fill the prepared glass with ice cubes and pour the pineapple mixture over the ice. 
  5. Garnish – Garnish with lime wedges and pineapple slices for a tropical touch. 
  6. Enjoy! – Sip your refreshing Pineapple Margarita Mocktail and enjoy!

For red ice cubes (optional):

  1. Place the berries in an ice cube tray, filling each compartment about halfway.
  2. Pour water or fruit juice over the berries until the compartments are full.
  3. Place the tray in the freezer and let it freeze for at least 2 hours or until solid.
  4. Once frozen, pop the ice cubes out of the tray and use them in drinks or as a fun garnish for your mocktail!
