Mushroom Puff Pastry Bites

Flaky, golden puff pastry stuffed with savory mushrooms, melty mozzarella, and garlicky goodness. Crispy on the outside, warm and cheesy on the inside—these bites disappear fast!

2 sheets puff pastry, thawed

12 oz baby bella mushrooms, chopped

3/4 cup onion, diced

2 teaspoons garlic powder

1 1/2 cups mozzarella cheese, shredded

Instructions

  1. Preheat the oven to 400 degrees.
  2. Chop the mushrooms and onions.
  3. In a medium skillet, cook the mushrooms, onions, and garlic powder over medium heat for 5-7 minutes, until mushrooms and a bit tender and fragrant.
  4. Cut each puff pastry sheet into thirds, then into thirds again to make 9 squares out of each sheet.
  5. Grease a muffin pan and place a puff pastry square into each of the cavities, and gently press to the bottom and up the sides.
  6. Sprinkle a little cheese into the bottom of each, then add some mushroom mixture and top with more cheese.
  7. Transfer to the oven and bake for 15 minutes, until golden.
  8. Serve warm, and enjoy!
