1/2 loaf baguette

1 tablespoon olive oil

2 tablespoons finely chopped onions

1 teaspoon minced garlic

4 oz portobello Mushrooms, chopped

1-1 1/4 cup Gruyere cheese, shredded

Fresh parsley to garnish

Instructions

  1. Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
  2. Slice the bread into 1/4-1/2 inch pieces (25 total), and arrange on the prepared baking sheet.
  3. Saute the onions in olive oil over medium low heat for 2-3 minutes, then add the minced garlic and saute for 30 additional seconds.
  4. Add the mushrooms, and saute for 5 minutes.
  5. Top each baguette slice with cheese, then mushrooms, then more cheese.
  6. Bake for 5-6 minutes, until the cheese is bubbly.
  7. Top with chopped parsley to serve.
