Equipment You Will Need

Keto Crackers Recipe
- Total Time: 30 minutes
Ingredients
1 1/4 cup (125 g) almond flour
1/4 cup (25 g) grated Parmesan cheese
6 black olives, finely chopped
1 tablespoon (15 g) chia seeds
1/4 cup (60 ml) water to hydrate the chia seeds
1 tablespoon (15 ml) olive oil
A pinch of salt
Optional: flax seeds for topping
Instructions
- Prepare the chia mixture – In a small bowl, mix the chia seeds with water. Let them sit for 10-15 minutes until they form a mucilage (gel-like texture).
- Prepare the dough – In a large bowl, combine the almond flour, grated Parmesan cheese, chopped olives, hydrated chia, olive oil, and the pinch of salt. Mix well until the dough is homogeneous.
- Roll out the dough – Place the dough on a sheet of parchment paper (baking paper). Cover it with another sheet of parchment paper and, using a rolling pin, roll out the dough to an even thickness (approximately 3-4 mm).
- Decorate and cut – Remove the top parchment paper and sprinkle extra Parmesan cheese and flaxseeds over the dough, pressing gently to make them stick. Cut the dough into small squares using a cookie cutter or a sharp knife.
- Bake – Preheat the oven to 180°C (350°F). Transfer the parchment paper with the squares to a baking tray and bake for 10 minutes. Then, increase the temperature to 230°C (450°F) and bake for another 10 minutes, checking frequently to prevent burning.
- Cool and separate – Remove the crackers from the oven and let them cool completely before separating them from the cuts. This will prevent them from breaking.

Further Baking Tips
- For extra crispiness: Leave the crackers in the oven (turned off) for an additional 5-10 minutes after baking to remove any residual moisture.
- Herb option: Incorporate dried herbs like oregano, thyme, or rosemary for an aromatic twist.
- Cheese alternatives: Substitute Parmesan with Pecorino Romano or nutritional yeast for a dairy-free option.
- Thickness matters: Ensure the dough is rolled out evenly to avoid some crackers being undercooked or overcooked.
- Cutting shapes: Experiment with different shapes (e.g., triangles or circles) for fun and presentation.
- Storage: The crackers can be stored in an airtight container at room temperature for up to a week or frozen for longer storage.
- Serving suggestions: Pair these crackers with keto-friendly dips like guacamole, hummus made from zucchini, or a creamy cheese spread.
