These Easter Whoopie Pies are soft, fluffy cake mix cookies sandwiched with creamy frosting for the perfect festive treat. Easy to make and decorated in Easter sprinkles, they’re a fun and delicious addition to any Easter celebration.

Ingredients

13.25 oz box of white cake mix

1/2 cup vegetable oil

2 eggs

Easter sprinkles

1 cup vanilla frosting

2 drops red food coloring

Instructions

  1. Preheat the oven to 350 degrees.
  2. Line a baking sheet with parchment paper.
  3. Beat the cake mix, oil, and eggs in a medium bow, or bowl of a stand mixer, until a dough forms.
  4. Use a cookie scoop to gather dough, then drop onto a baking sheet.
  5. Top with sprinkles, and flatten slightly to push them into the dough.
  6. Transfer the baking sheet to the oven and bake for 10 minutes, remove and allow to cool for a few minutes, then transfer to a wire rack to cool completely.
  7. Add frosting to the bowl, then stir in the food coloring until a solid pink color has formed. Then add the frosting to a piping bag and snip off the tip. Pipe frosting into the center of 12 of the cookies, then top with another cookie, and gently push them together slightly.
