This Easter Layer Cake is a showstopper! Layers of white cake flavored with lemon are dyed pastel colors and stacked with a fluffy lemon buttercream. You can decorate this tall, delicious cake with any Easter sprinkles or candy you like. This cake is gorgeous and easy with the help of a cake mix base that gets doctored up. Homemade lemon buttercream completes this cake perfect for Spring.

Ingredients

For the cake:

2 (15.25 ounce) boxes white cake mix

8 egg whites

2 1/2 cups milk

1 cup butter

1 tablespoon lemon juice

Yellow, blue, pink food coloring

For the frosting:

2 sticks unsalted butter, softened to room temperature

2 pounds powdered sugar

6 tablespoons milk

2 tablespoons lemon juice

Yellow food coloring

Instructions

  1. Preheat your oven to 350 degrees.
  2. Melt your 1 cup of butter.
  3. In a large mixing bowl combine the cake mix, melted butter, 8 egg whites, milk, and lemon juice.
  4. Spray three 8 inch cake pans with non-stick spray.
  5. Divide the cake batter between the 3 bowls
  6. Add pink food coloring to one bowl, yellow to another and blue to another.
  7. Pour each color batter into a prepared pan.
  8. Bake the cakes for 22-25 minutes or until a toothpick inserted in the middle comes out clean.
  9. Let the cakes cool slightly and then remove from the pans onto a wire rack to cool completely.
  10. Once the cakes are completely cooled you can make your frosting.
  11. In a large bowl combine your softened butter, powdered sugar, 6 tablespoons milk, yellow food coloring and 2 tablespoons of lemon juice.
  12. Place one cake on your cake plate and top with a good amount of the frosting and spread out.
  13. Top with the other cake.
  14. Place frosting on top of that one and add the final cake layer.
  15. Frost the cake completely.
  16. Using a piping bag or ziploc bag with the corner snipped off to pipe around the edge.
  17. Decorate with Easter candies and or Easter sprinkles.
  18. Slice and serve!

Notes

  • Keep leftovers in an airtight container in refrigerator for up to 4 days.
  • White cake mix is best for this cake as it allows the colors to shine through.
  • You can color the frosting any color you prefer.
