Light, airy, and melt-in-your-mouth, these Easter Bunny Meringue Cookies are as cute as they are sweet. With glossy pastel swirls and crisp bites, they’re a charming showstopper for any Easter dessert table.

4.59 oz egg whites

orange gel food coloring

pink gel food coloring

green gel food coloring

For the syrup:

9.17 oz granulated sugar

2.82 oz water

Instructions

  1. Preheat the oven at 104°C. 
  2. In a small saucepan, combine 9.17 oz of sugar and 2.82 oz of water and stir. Turn on the heat and wash the sides of the pan with a pastry brush and water. With a candy thermometer on the side of the pan wait until sugar syrup reaches 115°C. 
  3. Add egg whites to the bowl of your stand mixer. 
  4. When sugar syrup reaches 115°C, start whipping the egg whites on medium speed. Wait until egg whites get foamy and when the sugar syrup reaches it’s target temperature of 118°C, slowly pour it into the foamy egg whites. 
  5. Continue to whip egg whites to the stiff peaks stage until it’s glossy.
  6. Divide the meringue into 4 small bowls. Add food coloring to 3 of the bowls, stir with spatula until combined. You will have green, orange, pink and white meringue bowls. 
  7. Using piping bags, make the bunny as shown in the process images. 
  8. Bake at 36°C for at least 1 hour up to 2 hours. Let them cool down.
