Ingredients
2 oz dark rum
5 oz ginger beer
Ice
Lime wedge or wheel, for garnish
Instructions
- Chill the Glass: Start by chilling a highball glass. You can do this by filling it with ice and letting it sit while you prepare the other ingredients.
- Combine the Ingredients: Fill the mixing glass with ice, dark rum and ginger beer. Carefully pour the ginger beer over the back of a spoon held just above the rum and ice. This helps to create a layered effect, with the darker rum mixture at the bottom and the lighter ginger beer on top.
- Garnish: Garnish the cocktail with a slice of lime.
Notes
This is a very easy reciped to scale up and serve by the jug, just don’t make it too much ahead of time as the ice will melt diluting the flavor (or go a little more heavy handed on the rum to compensate for this!)
