For the cake base:

1/2 cup vegetable oil

1 1/4 cups boiled beets

2 tablespoons cocoa

2 cups whole wheat flour

1/4 cup almond flour

1/2 cup sugar

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

2 eggs

1 teaspoon vanilla

3 tablespoons milk

For the frosting:

1/2 cup cream yogurt

1 cup cream

1 tablespoon cocoa

1/4 cup sugar

Christmas sprinkles

Instructions

  1. Make puree from boiled beets and add to a cup.
  2. Weigh and add dry ingredients.
  3. Add eggs and liquid ingredients, mix.
  4. Place the dough in 2 small molds. 8-9 inches each.
  5. Bake 350F for 35 minutes.
  6. Cool before constructing your cake.
  7. For the cream, whip the cream and add the remaining ingredients.
  8. Assemble the cake.
  9. Spread with cream and add sprinkles.
