Ingredients

32 ounces of potatoes

1 cup of cheddar, gouda, or other cheese of your choice

1 cup of shredded mozzarella cheese

½ teaspoon of salt

A pinch of pepper

1 medium onion

2 tablespoons of flour or cornstarch

Butter (as needed, to grease the waffle iron)

Tomato sauce or your favorite dip, for serving

Instructions

  1. Prepare the potatoes – Place the washed whole potatoes (with skin on) in a pot of water. Cook for 8 minutes until they are partially cooked. Remove from the water, let cool slightly, and peel them.
  2. Grate the ingredients – Grate the peeled potatoes into a large bowl. Grate the onion and add it to the bowl with the potatoes.
  3. Mix – Add the shredded cheeses, flour or cornstarch, salt, and pepper. Mix everything thoroughly with your hands until you achieve a uniform dough.
  4. Shape the balls – Use a spoon to scoop small portions of the mixture to ensure uniform size. Roll the portions into small balls, pressing lightly to compact them.
  5. Cook in the waffle iron – Preheat the waffle iron and grease it lightly with butter to prevent sticking. Place a potato ball in the center of each section of the waffle iron and gently press to flatten. Cook for 3-5 minutes until the waffles are golden brown and crispy.
  6. Serve – Carefully remove the potato waffles and serve them hot with tomato sauce or your favorite dip.

Notes

  • Air fryer option: These can be made as tater tots in an air fryer. Cook at 390°F (200°C) for 8-10 minutes, flipping halfway through.
  • Freezing: Shape the balls and freeze them on a tray. Once frozen, store them in an airtight bag. Cook directly from frozen.
  • Spices: Add garlic powder, paprika, oregano, or thyme for an extra flavor boost.
  • Add vegetables: Mix in grated carrots or finely chopped spinach for a healthier twist.
  • Vegan version: Substitute cheese with vegan cheese and butter with margarine.
