Cheddar Cheese Taco Cups are a low-carb twist on taco night, using baked cheddar cheese slices as crispy, flavorful cups. They’re filled with your favorite taco toppings for a fun, bite-sized snack or appetizer. Perfect for keto-friendly meals or party platters!

Ingredients

8 slices deli style cheddar cheese

8 oz ground beef

1 1/2 tablespoons taco seasoning

1/4 cup lettuce, chopped small

1 roma tomato, diced small

1/3 cup sour cream

1 green onion, sliced

Instructions

  1. Preheat the oven to 375 degrees.
  2. Chop your veggies.
  3. Line a baking sheet with parchment paper and arrange the cheese slices so that they are not touching. Bake in the oven for 5 minutes, until they are bubbly.
  4. Remove from the oven and allow them to cool for just 2-3 minutes, then when they’re ready to be picked up, gently pick them up and mold them inside the muffin tins to fold a cup. Allow them to cool inside the muffin tin for 10-15 minutes.
  5. While the cheese is cooling, cook your ground beef, breaking it up as it cooks, until no longer pink. Drain the grease, then add the taco seasoning and just a tablespoon of water and mix it all together.
  6. Once the cheese is ready, remove the cups from the muffin pan and arrange on a platter or plate. Then fill with the ground beef, lettuce, tomato, and top with a dollop of sour cream and some green onions.
