]]> A Moscow mule is one of those drinks people order just as much for the copper mug as for what’s inside it — and honestly, I don’t blame them. The spicy ginger beer and bright lime make it one of the most refreshing things you can hand someone on a hot day, mug or no mug.

If you’re skipping the vodka because you’re pregnant, in recovery, underage, the one driving tonight, or simply not in the mood, there’s no need to explain yourself here. This version still delivers all that spicy, fizzy kick, just without the alcohol doing any of the heavy lifting — turns out it wasn’t doing much anyway.

I make this in big batches for backyard get-togethers regardless of who’s drinking, because by the time everyone’s had one, half the guests are asking for the “virgin” version anyway. Copper mugs optional, but highly recommended.

Why You Won’t Miss the Vodka

Ingredients

1/2 oz fresh lime juice

4 oz spicy ginger beer (not ginger ale)

1–2 oz club soda, to taste

1 lime wheel, for garnish

1 mint sprig, for garnish

Instructions

  1. Fill a copper mug with ice.
  2. Add the lime juice.
  3. Top with the ginger beer and club soda.
  4. Stir gently — just enough to combine without losing the fizz — and garnish with a lime wheel and mint sprig.

Notes

  • Look for a ginger beer with real ginger and a good spicy kick (Fever-Tree, Reed’s, and Gosling’s are all solid choices) — it’s doing all the flavor work here.

 

  • This is also great muddled with a slice of fresh ginger or a few mint leaves in the bottom of the mug before adding ice.

A Few Notes on Substitutions

  • No real “substitute” needed for the vodka — it’s simply left out, with club soda added back in to replace the volume and slight dilution it used to provide.

Why This Tastes Like the Real Thing

Here’s the part that surprised me when I dug into how bartenders actually build this drink: vodka barely contributes any flavor to an espresso martini. It’s there for body and a little bite, but the coffee and the coffee liqueur are doing all the talking.

That makes this one genuinely easy to “demote” — we just need a stand-in for the coffee liqueur’s deep, almost molasses-y sweetness, which is exactly what a dark brown sugar syrup gives us.

And the foam? That’s not the alcohol either — it’s pure shaking technique. Even the official “virgin” version of this drink relies on a hard, long shake to get that signature crema, so don’t skip it here.

Ingredients

3 oz strong chilled espresso (or double-strength cold brew concentrate)

3/4 oz dark brown sugar simple syrup (recipe below)

1/2 oz cold water

3 coffee beans, for garnish

For the brown sugar syrup: simmer equal parts dark brown sugar and water until dissolved, then cool completely.

Instructions

  1. Chill a martini or coupe glass in the freezer for at least 5 minutes.
  2. Fill a cocktail shaker with ice. Add the espresso, brown sugar syrup, and cold water.
  3. Seal and shake hard for a full 30–45 seconds — longer than you would for the boozy version, since the shake (not alcohol) is what builds the foam.
  4. Strain into the chilled glass and garnish with three coffee beans, arranged in a little triangle on top.

Notes

  1. The water is standing in for the dilution vodka would normally add — don’t skip it, or the drink will taste too concentrated.
  2. Want more dimension? Stir 1/4 teaspoon of cocoa powder into the warm syrup before it cools.
  3. Best served immediately — the foam is most dramatic in the first minute or two.

A Few Notes on Substitutions

  • No vodka swap needed. Since vodka is nearly flavorless, simply leaving it out (and adding a splash of water back in for dilution) keeps the coffee front and center — no special “vodka replacement” required.
  • Brown sugar syrup stands in for the coffee liqueur. Kahlúa’s flavor is part coffee, part deep caramelized sweetness — dark brown sugar or muscovado syrup gets you most of the way there.
  • For a creamier pour, a splash (about 1/2 oz) of heavy cream or oat milk creamer mimics the richer, dessert-leaning versions some bartenders make with Irish cream — totally optional.

Pregnant, sober, not drinking tonight, or just craving something bubbly without the buzz — it doesn’t matter why you’re here, and I’m not going to ask. What matters is that this still tastes bittersweet, bright, and just a little sophisticated, the same way the original does.

I keep the components for this one ready to go most summer weekends, since half my guests usually want the alcohol-free version anyway. It’s become such a regular in my own rotation that I sometimes forget it ever had Aperol in it to begin with.

How to Rebuild That Bittersweet Flavor

Aperol’s whole personality comes from a bittersweet combination of orange and herbal bitterness, balanced against sugar. Plain orange juice on its own reads as, well, orange juice — so a splash of grapefruit juice is what brings back that grown-up bitter edge.

As for the Prosecco, its main job is dryness and bubbles rather than big flavor, which is why a chilled sparkling white grape juice (cut with a touch of lemon so it doesn’t taste like a juice box) makes such a good stand-in.

Why the Layers Still Work

Both the vodka and tequila versions of this drink lean on orange juice and grenadine for nearly all of their flavor — and the layered “sunrise” look comes from grenadine simply being denser than juice, which has nothing to do with alcohol at all.

Skipping the spirit does make the drink a touch sweeter and flatter, so a splash of soda water brings back some lift, which is the same trick most bartenders use to mocktail-ify this one.

Why Grapefruit Does Most of the Work Here

This is one of the easiest cocktails to mocktail-ify, because grapefruit’s natural bitterness already does a lot of what alcohol usually provides in a cocktail — it’s what makes the drink taste “grown-up” even without tequila. Several bartenders who’ve developed mocktail versions agree on this: fresh grapefruit, lime, a touch of sweetness, salt, and fizz really is the whole drink, with tequila mostly adding warmth on top.

Ingredients

Units
  • 3 oz fresh grapefruit juice
  • 1/2 oz fresh lime juice
  • 1/2 oz agave nectar or honey, to taste
  • Small pinch of salt
  • 2 oz club soda or grapefruit soda
  • Coarse salt, for the rim

Instructions

  1. Run a lime wedge around the rim of a glass and dip it into a small plate of coarse salt.
  2. Fill the glass with ice. Add the grapefruit juice, lime juice, agave, and a small pinch of salt; stir until the agave dissolves.
  3. Top with club soda, give a gentle stir, and garnish with a grapefruit wedge.

Notes

  1. Taste and adjust the agave to your liking — grapefruit juices vary quite a bit in sweetness and tartness depending on the variety.
  2. Make this in a pitcher for a crowd by multiplying everything but the club soda, then topping each glass off individually so it stays fizzy.

A Few Notes on Substitutions

  • That pinch of salt in the drink (not just the rim) is a trick several mocktail developers use to replace the savory depth tequila usually brings — it sounds unusual, but it really does round out the tartness.
  • For more of that “tequila” warmth, muddle a couple of thin jalapeño slices into the grapefruit juice 10–15 minutes ahead of time.
  • If you can find grapefruit soda (Jarritos or Squirt are the classic picks), swap it in 1:1 for the club soda for an even closer match to the original.
