3 small potatoes
1 tablespoon olive oil

1 cup shredded, cooked chicken
3 tablespoons buffalo wing sauce
1/4 cup cheddar cheese, shredded
2-3 tablespoons blue cheese dressing
1 green onion, diced
Instructions
- Preheat the oven to 400 degrees. Line a small baking sheet with parchment paper.
- Dice the green onions and set aside for later.
- Poke holes in the potatoes with a fork. Brush olive oil over the potatoes, then sprinkle with salt.
- Arrange potatoes on a baking sheet and bake for 1 hour.
- Remove the potatoes from the oven, and allow to cool for 5-10 minutes before handling. Slice potatoes in half lengthwise and arrange cut side down on the baking sheet. Broil for 2-4 minutes to get crispy.
- Stir the buffalo wing sauce into the chicken.
- Flip the potatoes over on the baking sheet, and using a small spoon, take out the inside, leaving about 1/4 inch around the edges and bottom.
- Fill the potatoes with the chicken mixture, then top with cheese. Bake for 10 minutes at 400 degrees, until the cheese is melted.
- Remove the potatoes from the oven, and top with blue cheese dressing and green onions.
