Ingredients

3 small potatoes

1 tablespoon olive oil

Salt

1 cup shredded, cooked chicken

3 tablespoons buffalo wing sauce

1/4 cup cheddar cheese, shredded

2-3 tablespoons blue cheese dressing

1 green onion, diced

Instructions

  1. Preheat the oven to 400 degrees. Line a small baking sheet with parchment paper.
  2. Dice the green onions and set aside for later.
  3. Poke holes in the potatoes with a fork. Brush olive oil over the potatoes, then sprinkle with salt.
  4. Arrange potatoes on a baking sheet and bake for 1 hour.
  5. Remove the potatoes from the oven, and allow to cool for 5-10 minutes before handling. Slice potatoes in half lengthwise and arrange cut side down on the baking sheet. Broil for 2-4 minutes to get crispy.
  6. Stir the buffalo wing sauce into the chicken.
  7. Flip the potatoes over on the baking sheet, and using a small spoon, take out the inside, leaving about 1/4 inch around the edges and bottom.
  8. Fill the potatoes with the chicken mixture, then top with cheese. Bake for 10 minutes at 400 degrees, until the cheese is melted.
  9. Remove the potatoes from the oven, and top with blue cheese dressing and green onions.
