2 cups semi sweet or dark chocolate chips, divided
1/2 cup Bailey’s Irish Cream
1 tablespoon chocolate jimmy sprinkles
Instructions
- In a microwave safe bowl, heat one cup of the chocolate chips with the Bailey’s for one minute. Stir well.
- If needed, heat for an additional 30 seconds and stir until completely melted and smooth.
- Chill in the freezer for about 30 minutes or until the ganache is set.
- Line your work surface with parchment.
- Melt the remaining chocolate chips in the microwave in 30 second increments and stir until smooth. Allow to cool slightly.
- Remove the ganache from the freezer and scoop into one inch size balls (about a tablespoon or so).
- Working quickly, use a spoon to dip the ganache into the melted chocolate and tap the excess chocolate on the side of the bowl.
- Place the dipped truffle on the parchment and decorate with the sprinkles before the chocolate hardens.
- Repeat with the remaining truffles.

- Truffles can be stored at room temperature for up to 7 days.
