Decadent and creamy, these Baileys Chocolate Truffles blend melted chocolate with Irish cream to create a luscious ganache, rolled and dipped in a glossy chocolate shell. A dusting of sprinkles adds the final festive touch to these easy, melt-in-your-mouth delights.

Ingredients

2 cups semi sweet or dark chocolate chips, divided

1/2 cup Bailey’s Irish Cream

1 tablespoon chocolate jimmy sprinkles

Instructions

  1. In a microwave safe bowl, heat one cup of the chocolate chips with the Bailey’s for one minute. Stir well.
  2. If needed, heat for an additional 30 seconds and stir until completely melted and smooth.
  3. Chill in the freezer for about 30 minutes or until the ganache is set.
  4. Line your work surface with parchment.
  5. Melt the remaining chocolate chips in the microwave in 30 second increments and stir until smooth. Allow to cool slightly.
  6. Remove the ganache from the freezer and scoop into one inch size balls (about a tablespoon or so).
  7. Working quickly, use a spoon to dip the ganache into the melted chocolate and tap the excess chocolate on the side of the bowl.
  8. Place the dipped truffle on the parchment and decorate with the sprinkles before the chocolate hardens.
  9. Repeat with the remaining truffles.

Notes

  • Truffles can be stored at room temperature for up to 7 days.
