These easy Antipasto Skewers are a fun and flavorful appetizer, perfect for parties and gatherings. Loaded with cheese, cured meats, marinated tortellini, olives, and tomatoes, they’re a delicious handheld twist on a classic antipasto platter.

  • Total Time: 35 minutes
  • Yield: 10-12 skewers

Ingredients

Scale

30-35 pitted olives

8 oz block mozzarella cheese, diced

10-12 cherry tomatoes

1/2 package tortellini pasta

10-12 pieces of salami

10-12 pieces of pepperoni

1/2 cup Italian dressing

Topping:

Balsamic Vinaigrette

Instructions

1. Cook half a package of tortellini pasta according to package instructions; drain, cover in 1/4 cup Italian dressing, and let marinate and cool completely for about 15 minutes.

2. While tortellini cools, dice 8oz of mozzarella cheese into bite-sized cubes. Pour the other 1/4 cup of Italian dressing on top of the cheese cubes, coating completely and let marinate with the Tortellinis.

3. Gather 30–35 pitted olives, 10–12 cherry tomatoes, 10–12 slices of salami, and 10–12 slices of pepperoni. Dice the cherry tomatoes in half.

4. Assemble each skewer by threading on a mix of the following (in any order you prefer):

  • 2-3 olives
  • 2 cubes of mozzarella
  • 1 cherry tomato, sliced in half
  • 2 cooked tortellini
  • 1 piece of salami (folded, if desired)
  • 1 piece of pepperoni (folded, if desired)

5. Place assembled skewers on a serving dish.

6. Drizzle with balsamic vinaigrette just before serving.

7. Serve immediately or refrigerate until ready to serve.
