24 oz mini potatoes
3 tablespoons olive oil
2 tablespoons coarse sea salt
1/2 cup cheddar cheese, shredded
1/2 cup sour cream
1/4 – 1/3 cup bacon pieces
2 tablespoons fresh chopped chives
Instructions
- Wash the potatoes, then add to a bowl and toss with olive oil and coarse sea salt.
- Add the potatoes to the air fryer basket and air fry at 385 degrees for 27-30 minutes, sharing the basket every 8-10 minutes, until fork tender. (cooking time may vary if you have larger potatoes)
- Once potatoes are done, arrange them on a baking sheet or platter, then cut an “x” into the tops, and pinch from the bottom of the potatoes to open them up a bit.
- Top the potatoes with cheese and a dollop of sour cream, then top with bacon pieces and chives.
