Ingredients
5 oz bag of pork rinds
1/2 lb ground beef
2 teaspoons taco seasoning
1 cup sharp cheddar cheese, shredded
1 roma tomato, diced
1 avocado, diced
2.25 oz can sliced black olives, drained
1/4 cup sour cream
Instructions
- Preheat the oven to 350 degrees.
- Dice the tomato and avocado.
- Brown the ground beef in a cast iron skillet over medium heat, breaking it apart as it cooks, until no longer pink.
- Drain the grease, then stir in the taco seasoning and set the cooked meat on a plate.
- Add pork rinds to the iron skillet, then top with the cooked ground beef and cheese. Bake for 8-10 minutes, until the cheese is melted.
- Sprinkle the tomato, avocado and black olives over the top, then drizzle with sour cream.
